Ingredients:
125grams chopped meat
8 cups strong-flavored chicken stock
20grams chopped onions
20grams chopped carrots
20grams chopped carrots
20grams chopped celery
15grams chopped leeks
1 small bayleaf
½ teaspoon crushed peppercorns
Pinch of rosemary
Salt to taste
Royale Garnish:
3 eggs
½ cup scalded milk
Salt and white pepper to taste
Procedure:
- Combine all the stock ingredients and stir until boils.
- Lower heat and simmer without stirring for 3 hours.
- Set aside for 30 minute then strain through a cloth.
- Prepare Royale Garnish: Beat eggs in a bowl. Add milk, salt and pepper. Strain and pour into a container lined with wax paper. Cover and bake in the oven baine-marie style. Cool then chill.
- Heat the consommé before serving then top with diced royale garnish.
